Preparation:

1. Grate processed cheese, semi-hard cheese and boiled eggs on a fine grater, each separately.

2. Chop the dill greens finely and finely.

We need:

  • 200 g hard cheese
  • 10 – 15 pitted olives

We need:

  • 200 g hard cheese
  • 100 g roasted peanuts

We need:

  • 200 g hard cheese
  • 100 g crab sticks
  • 100 g ham
  • dried garlic
  • mayonnaise

Preparation:

1.Grate the cheese and crab sticks on a fine grater, each separately.

2. Cut the ham into small cubes (150x150 mm).

3. Mix cheese with dry garlic and mayonnaise, mix. We form balls, put a piece of ham inside, roll into a ball. This is what the ball looks like in cross section.

4. Bread the formed ball in crab sticks, since crab sticks do not stick well, they need to be pressed into the ball. The rest of the grated nuts can be used for breading, too.

Cheese balls – hard cheese snack with 5 fillings


To prepare five types of cheese balls, we need one cheese base. Therefore, first we prepare the cheese base, and then we will move on to using different toppings.

Base for balls


We need:

  • 300 grams of hard cheese, if desired, half the volume can be replaced with full-fat cottage cheese
  • 5 pcs eggs, boiled
  • 2-3 cloves of garlic
  • 1-2 jars of mayonnaise
  • salt, black allspice, to taste

Preparation:

1.Hard cheese, boiled eggs and three garlic on a fine grater. You can do it all in one bowl.

2. Add allspice to the resulting mass and season with 2-3 tablespoons of mayonnaise. Mix thoroughly, taste for salt and add more salt if necessary.

The cheese mass should be neither dry nor liquid, so it is better to add mayonnaise one spoon at a time and watch the consistency of the mass. We try to form a ball, if it rolls, then the dough has a good consistency.

3. Divide the resulting cheese mass into 5 equal parts and place in different bowls. The base is ready.

Crab cheese balls


We need:

  • cheese base
  • 200 g crab sticks
  • 1 tbsp. mayonnaise

Preparation:

1. Crab sticks, preferably slightly frozen, grate on a fine grater, 100 g each. into a separate bowl, use one part for the dough, the second will serve as breading.

2. Add some of the crab sticks to the cheese mass, mix, add mayonnaise if necessary.

3. We form balls, it is better to do this with gloves, wet your hands a little with water so that it does not stick to your hands, scoop with a teaspoon and roll into a ball.

4. Formed balls, bread them in crab shavings and place on a plate. Cool in the refrigerator.

Cucumber cheese balls


We need:

  • cheese mass
  • 1 piece small cucumber
  • 50 g red fish fillet, any
  • white and black sesame

Preparation:

1. Peel the cucumber and chop it into small cubes.

2. Cut the red fish fillet into small cubes (1x1 cm).

3. Mix the cheese mass with the cucumber, mix thoroughly until smooth.

Ingredients:

  • 200 grams of lightly salted red fish;
  • light sesame;
  • a mixture of white and black sesame seeds;
  • raw carrots;
  • walnut quarters;
  • a bunch of green onions;
  • greens (dill or cilantro);
  • Sun-dried tomatoes;
  • olives, pitted;
  • ground sweet red pepper;
  • pita.

Cooking method:

  1. First, we need to prepare the base for the holiday snack. To do this, grate hard cheese and eggs on a fine grater. Squeeze the garlic through a garlic press. Some housewives use processed cheese, but I prefer hard cheese.
  2. Salt and pepper to your taste, dilute with mayonnaise and knead. (You need to add enough mayonnaise so that the consistency of the mixture is suitable for making balls).
  3. Divide the cheese and garlic mass into 5 parts.
  4. Pour 2/3 of the grated crab sticks into the first plate and add a spoonful of mayonnaise. Mix everything thoroughly. (We reserve the remaining crab sticks for breading). With wet hands, form balls. They can be any size: I like them small, so I use one teaspoon of the mass. Balls with this filling can be decorated with finely grated chicken yolk or rolled in crab breading.
  5. Peel the cucumber, chop it into small cubes and add to the cheese mixture. Then cut the red fish into small cubes. We form cheese balls in the same way, and hide a small piece of salted fish in the middle. We bread the finished balls separately in each type of sesame.
  6. Raw carrots need to be grated and mixed with cheese. We fill these balls with a quarter of a walnut. For decoration we use pre-roasted and ground nuts.
  7. Then add very finely chopped fish and green onions and half a spoon of mayonnaise to the cheese and eggs. We use greens for decoration.
  8. To prepare the fifth version of the holiday snack: add chopped sun-dried tomatoes to the base. We hide an olive in the middle of each ball and bread it in paprika.
  9. Cut the pita bread into squares and dry them in a frying pan. The result is crispy chips for festive serving of our breaded cheese balls.

Ingredients:

  • 800 g potatoes,
  • 50 g butter,
  • 1 raw egg for puree,
  • ground red and black pepper,
  • salt to taste,
  • 40 g wheat flour,
  • vegetable oil for deep frying.

Cooking method:

  1. Without allowing it to cool, rub quickly and thoroughly with a wooden pestle.
  2. Add pre-melted hot butter, a raw egg, salt and pepper to taste, rub thoroughly again and mix.
  3. Form the warm mashed potatoes into small balls.

Ingredients:

  • 1 ½ cups long rice,
  • 100 hard cheese,
  • 1 cup chicken broth,

Ingredients:

  • Leafy greens (salad) - 4-5 pieces
  • Hard cheese - 100 grams
  • Crab sticks - 200 grams
  • Chicken egg - 2 pieces
  • Mayonnaise - 100 grams
  • Black or green olives - 50 grams (pitted)
  • Salt, ground black pepper - To taste

Cooking method:

  1. So, prepare your food. Boil the eggs, cool and peel them. Free the crab sticks from the plastic bags. Strain the olives from the liquid.
  2. On the finest grater, grate the cheese, eggs and crab sticks. Set aside a third of the crab shavings separately for breading the balls. Add mayonnaise. Salt and other spices are optional, I didn’t add anything, not even salt, it was just enough for my taste. Mix well.

  4. Place the balls on lettuce leaves. Cut the olives into halves and place each half on a ball, pressing it in a little. So the “Christmas balls” are ready.

Rice balls

Ingredients:

  • A glass of boiled rice
  • A can of canned fish in its own juice (I have pink salmon)
  • Boiled eggs - 3 pieces
  • Mayonnaise - 3 tablespoons
  • Bunch of dill
  • Raw carrots - 1 pc.

Preparation:

  1. Mash the fish with a fork along with the juice. If there is a lot of juice, it is better to drain some of it first, then you can add more if you see that the mass is too dry.
  2. Grate the whites on a fine grater. Grate the yolks separately on a fine grater or simply chop them well with a fork (that’s exactly what I do).
  3. Mix rice, fish, proteins and mayonnaise, salt and pepper. Mix well.
  4. Grate the carrots on a fine grater. Chop the dill.
  5. Cut the salad into balls, roll in herbs, yolks and grated carrots.

Curd croquettes (balls)

Ingredients:

For croquettes:

  • 500 g cottage cheese
  • 1 small carrot
  • 1/2 bunch of dill
  • handful of chopped walnuts
  • 1 tbsp. l. vegetable oil
  • 1 yolk
  • 1 tsp. cumin
  • a pinch of salt.

For vegetable salad:

  • 2 fresh cucumbers
  • 100 g radish
  • 1/2 bunch of green onions
  • 1/2 bunch of parsley
  • lettuce leaves.

Preparation:

  1. Place the cottage cheese in a bowl and mash with a fork. Add finely grated carrots, walnuts, chopped dill, vegetable oil, and salt. Mix well.
  2. Using wet hands, form croquettes into balls from the resulting mixture and place in the refrigerator for half an hour.
  3. Place lettuce leaves on a dish, place cucumber and radish slices on top of the lettuce leaves, sprinkle with chopped green onions and parsley.
  4. Place curd croquettes on the prepared vegetable salad, sprinkle with grated yolk and caraway seeds.

Potato balls for side dishes

Ingredients:

  • 800 g potatoes
  • 50 g butter

Ingredients:

  • Garlic
  • Mayonnaise
  • Olives
  • Almonds
  • Dill

Preparation:

  1. Grate the cheese (any kind) on a fine grater and add very finely chopped garlic.
  2. Then add a little mayonnaise to the mixture until a plastic mass is obtained, knead well and mix.
  3. Place an almond in the middle of each olive.

  6. Lightly wet your hands and form rice balls. Roll first in flour, then in breadcrumbs. Place the balls in the refrigerator to harden for 1 hour.
  7. Heat the butter in a frying pan, place the balls in one layer and fry.

Vegetable snack balls

Ingredients:

  • Beets - 2 pieces
  • Carrots - 3 pieces
  • Low-fat cheese - 100 grams
  • Eggs - 2 pieces
  • Prunes - 50 grams
  • Nuts - 50 grams
  • Natural yogurt - 200 grams
  • Salt - to taste

Preparation:

  1. Boil carrots and beets until tender. Cool, clean.
  2. Boil the eggs, cool, and peel. Separate the whites from the yolks.

  3. The prepared tomatoes should be placed inside the mass, carefully formed into balls and rolled in finely chopped parsley or dill.
  4. It’s better to take dill (I know from practice), and then sesame.

Ingredients:

  1. Carbonade (or ham) 200 gr.
  2. Hard cheese 50 gr.
  3. Chicken egg 2 pcs.
  4. Garlic 1 clove
  5. Mayonnaise about 1 tbsp.
  6. Nuts to taste - about 70 grams of peeled ones - I took pine, walnuts and almonds.

Preparation:

  1. Grate the carbonate on a fine grater.
  2. Hard-boil the eggs, cool, peel and grate on a fine grater.
  3. Pass the garlic through a garlic press.

  5. Finely chop the nuts.

But only if you love blue cheeses themselves. For this recipe, I advise you to use either Dor Blue cheese or another blue cheese whose taste you like. It is better not to take risks and not to take unfamiliar varieties of cheese that you have never tried before. Such cheeses are very specific and may not suit your taste.

  • Dor Blue blue cheese (room temperature) 100 g
  • cream or curd cheese (room temperature) 100-150 g

Ingredients:

  • large sweet grapes
  • curd cheese (I used Karat with herbs) 140 g
  • Blue cheese (Dor-blue) 40 g
  • pistachios (weight with shell) 120 g

Cooking method:

  1. Wash the grapes, dry them, and tear them off the branches.
  2. It’s better if the grapes are blue, it’s more impressive.
  3. I had red-pink. I pulled out the bones.
  4. Each grape was not cut completely.
  5. Mix blue cheese or other sharp cheese and cream cheese. Cool.
  6. Remove shells and, if possible, husks from pistachios.
  7. Chop into crumbs with a knife.

  1. Grate boiled eggs, garlic and hard cheese on a fine grater, add allspice, mayonnaise and mix well until a dense, homogeneous mass is formed.

  9. To do this, peel a small fresh cucumber, cut it into very small cubes and add it to the main cheese mass, mix well.
  10. Using a teaspoon, scoop the mass into your hand, make a small depression in which we place a piece of any lightly salted red fish that you can afford.
  11. We make blanks for further sprinkling. And now we roll the prepared balls in a mixture of white and black sesame seeds, as well as in pure white sesame seeds.
  12. To prepare the third type of balls, add small raw carrots grated on a fine grater to the cheese base and mix well.

Step by step recipe

  1. Peel and rinse 2-3 cloves of garlic and 5 boiled eggs. Grate them on a fine grater, and do the same with 250 g of hard cheese.
  2. Add a pinch of black pepper and 3 tbsp. l. mayonnaise, mix and taste, it should suit you completely. If necessary, you can add more pepper and salt.

  3. Divide the mixture into 5 parts and place in different bowls. Add 100 g of crab sticks, grated on a fine grater, to one part. You can grate them frozen, it’s easier.

  4. Stir, if necessary, you can add a little mayonnaise. Form balls from this mass. Separately grate 100 g of crab sticks and bread the balls in them.

  5. Peel one fresh cucumber, rinse, grate on a fine grater, add to the second part of the cheese mixture and mix. Cut 50 g of any lightly salted fish into small cubes. When forming balls from the cheese mixture with cucumber, place a piece of fish inside.
