Every culinary specialist understands that a delicious cake is a real decoration for any family holiday. I really want the cake to delight you with its taste and appearance, but not everyone wants to spend half a day in the kitchen preparing such a culinary masterpiece.

There are a huge number of cake recipes that are quite easy, quick and simple to prepare, but will surely give a head start to their multi-layered fancy cake cousins. The Winnie the Pooh cake is just like that. It consists of a delicate honey cake, delicious aromatic poppy seed cream and airy marshmallows dipped in dark chocolate. The cake is prepared quickly and simply, without separating eggs into whites and yolks and without other difficulties, and it always works.

Poppy cream is also prepared very quickly. All you have to do is place the finished marshmallows on top of the cream, pour melted chocolate on top and put the cake in the refrigerator for several hours. Remember some nuances. First, the cake bakes quite quickly, so don’t miss this moment. Second: if you dry out the cake a little, you can additionally soak it with warm sweet tea. Third: use quality products in your work. Check that the poppy seeds are not bitter, and that the butter and chocolate are natural, without any palm oil. Fourth: the cake is best served cut into squares so that each square contains half a marshmallow.

This honey cake was my favorite cake as a child. It is moderately sweet and very tender!

Ingredients

✓ 3 cups flour

✓ 1-2 tbsp honey

✓ 50 g butter

✓ 1 cup sugar

✓ 1 tsp soda

✓ 2 tbsp vodka (optional)

✓ 1/2 tsp salt

✓ 2 cups cream

✓ 2-3 cups of sour cream

✓ 1 tbsp vanilla essence or cognac

✓ 1/2 cup sugar or to taste

✓ walnuts (optional)

(cream can be made without cream, from 1 liter of village sour cream)

Recipe

The dough is prepared in a water bath. Boil water in a saucepan, place a bowl on top in which you will make the dough. The water under the bowl should slowly boil all the time.

Place butter, sugar, lightly beaten eggs in a bowl and heat the whole mass, stirring constantly with a whisk.

Add honey, then salt and soda (quicklime) and stir constantly in a water bath until the sugar dissolves, about 5 minutes.

Add 2 cups of flour, stir, continuing to heat the dough for another 5 minutes (the dough should warm up well).

Remove the bowl from the water bath, add another cup of flour and knead the dough. Preheat oven to 190°C/375°F.

Divide the finished dough into 8 parts. Roll each piece into a circle measuring 20-23 cm/8-9 inch (while one is baking, roll out the other).

Lightly grease the baking sheet with oil (saturate a paper towel with vegetable oil and grease the baking sheet, or spray with oil from a can) or line with parchment paper.

Bake the cakes for 6-7 minutes until browned. Cut the hot cakes according to the stencil and cool completely on a wire rack.

Dry the remaining scraps in the oven and use them to top the cake.

For the cream: whip the cream to soft peaks, add sour cream in parts and beat until thick (not at all for long, otherwise the cream will heat up and the mass will turn out liquid).

Cream and sour cream should be cold. You can also mix sour cream with cream and beat it all at once.

Grease the cake layers and edges with cream (you can add finely chopped toasted nuts between the cake layers or add nuts to the crumbs and sprinkle the cake). Decorate as desired.

Place the cake in the refrigerator to soak for 8-12 hours.

My comments: I make exactly half of the cream, add 1 tbsp to it. honey for flavor. I like it best with acacia honey.

I keep the cake dough in the refrigerator for 12-24 hours to develop the honey aroma.

I get 8-9 cake layers, I usually leave half of one for sprinkling. And I eat the second half like this because it’s delicious!

The dough is prepared in a water bath: sugar, butter and lightly beaten eggs are heated in a bowl and stirred with a whisk. Then honey, salt and soda are added. Continue heating in a water bath and stirring until the sugar dissolves. Add two-thirds of the flour, stir for another 5 minutes, then remove the dough from the bath and add the remaining flour.

The finished dough is divided into several parts, rolled out and placed in an oven preheated to 200 degrees. Each cake is baked until browned (it takes me no more than 10 minutes).

For the cream, sour cream is whipped with sugar. The cakes are coated with cream. The cake can be left in the refrigerator overnight to soak. It’s also delicious if you add finely grated lemon zest to the cream.

  • almonds, white chocolate, toffee candies: 200 g each;

Step-by-step execution

"Winnie the Pooh" (cake) is being made from dough and honey. Bring six tablespoons of honey to a boil, then add two glasses of sugar and six tablespoons of water, soda, a pinch of salt and cook until the mass becomes richly brown with an orange tint. After this, remove from heat, add butter and cool.

Then you need to add six eggs and seven glasses of flour. The dough is covered and left for about two hours.

The resulting dough must be divided into fifteen parts. Each part should be rolled out between sheets of baking paper.

Bake the cakes in a heated oven for eight minutes, after which the baking paper is removed and the cakes are stacked on top of each other.

Cake cream

Beat 450 g of butter, add 3 cans of boiled condensed milk in parts and mix thoroughly. The cakes are greased with the prepared cream and soaked for eight hours.

Shortbread dough

This dough is necessary for making a pot. To prepare it, margarine must be mixed with sugar, add 4 yolks, flour and baking powder without a slide. Divide the dough into 14 portions, each rolled out between baking sheets with a diameter of 17 cm. The edges should be trimmed in a circle.

The cakes are baked in a heated oven. They turn out white with slightly brown edges.

Now you need to make the cream for the pot. Melt 250 g of butter, add uncooked condensed milk, vanilla, a spoonful of honey and heat, but do not boil. Remove, add gelatin, cool in the refrigerator and beat.

After this, you need to whip 0.4 liters of cream and add to the resulting mass. The cream is ready, apply it to the shortbread cakes. This should be done carefully as they are very fragile.

The already soaked honey cake is cut in the shape of a figure eight, thus creating the silhouette of the head and body. The scraps are ground in a blender and sculpted into ears, arms and legs. The belly does not need to be made very round, since the pot will be attached to it.

Glaze

Add 40 g of butter to the milk and bring to a boil. Then you need to add powdered sugar and toffee. Cook until they dissolve. Cool the glaze and cover the bear with it, then put it in the refrigerator to harden.

Mastic

The next product needed to cover the Winnie the Pooh cake is mastic. It is used for a bear. It is prepared like this: boil 50 ml of water, add a pinch of salt, 25 g of butter. After boiling, add another fifty grams of flour and cocoa. Remove, mix, add powdered sugar. The muzzle, ears, arms and legs are covered with mastic. Marzipan is used for the whites of the eyes and tongue.

Pot

The pot needs to be shaped. White chocolate is poured with heated cream and boiled until smooth. Cover the pot with it and put it in the refrigerator.

Then you need to chop the almonds, mix with powdered sugar and protein. Divide the resulting marzipan into two parts, roll it out, then transfer it to the finished pot.

"Winnie the Pooh" (cake) is placed on a tray, a pot is moved towards the bear.
