Filling options

Curd dough is universal - pies can be made from it with any filling. Unsweetened ones can be served as an addition to the first course, and sweet ones as a dessert.

Cabbage

A classic filling loved by many.

Cabbage filling has a delicate and at the same time rich taste

  1. Boil 2 hard-boiled eggs and cut into cubes.

It is important not to overcook the eggs so that the yolk does not turn gray.

  2. Grind green onions (100 g).

Onions add flavor to the filling

  3. Shred cabbage (300 g).

    Fresh harvest cabbage is best

  4. Cut the onions into half rings (2 pcs.).

Cut the onion with a sharp knife

  5. Fry cabbage and onions in butter (50 g). Mix everything and add salt (1\2 tsp).

Fry the vegetables over low heat until the butter begins to burn

Izyumnaya

An unusual filling, but goes very well with the curd dough.

100 grams of black raisins contain only about 230 kcal and 60 g of carbohydrates, while white raisins contain at least 280 kcal and 70 g of fast carbohydrates, which are not very beneficial for our body

  1. Soak 300 g of raisins in boiling water for half an hour.

Honey adds additional sweetness and delicate aroma to the pie filling.

Cherry

Curd dough and cherries are the perfect combination for dessert.

Starch is needed to thicken cherry juice.

My mother-in-law is an expert at baking pies with a variety of fillings. I have never tried anything tastier and fluffier than her yeast pies. But recently she surprised me again with an unusual recipe for cottage cheese dough. Baking from it is no worse than from baked yeast, and it is prepared faster and easier. In addition, not everyone is recommended to use yeast, and here it doesn’t even contain margarine or butter. If you bake pies from curd dough in the oven, then you generally get a low-calorie version of baking.

The universal curd dough allows you to prepare pies that can be fried in a pan or baked in the oven. The recipe is so simple that even children can be involved in the preparation. Try pies made from delicate dough with cottage cheese, because they literally melt in your mouth!

Made from yeast dough - a dish that is understandable to everyone in its simplicity and at the same time has a subtlety of taste and the possibility of variations on the main theme. Almost every housewife knows how to do it. Probably everyone knows how to make cottage cheese filling. But the fact remains: these simple buns sometimes turn out tastier than many delicious dishes. So let's try to cook them too!

Buns with cottage cheese made from yeast dough. Basic recipe

Such buns will turn out tasty and golden brown, soft and fluffy if they are made on the basis of yeast dough with an open cottage cheese filling. They are popular in every family where the hostess constantly bakes, and they will appeal to unexpected guests, as they are very tasty with tea, for example. And for breakfast, simple buns with a cup of coffee are just right. But to prepare baked goods, you first need to make the right dough, which is what we will do right now.

Preparing the dough

Preparing the filling

The basic filling can be prepared from 700 grams of market crumbly cottage cheese, not too fatty, but not zero either (if you don’t have it on hand, you can use store-bought), two eggs (we use only whites, and leave the yolks for greasing the top of the baked goods when we cook put in the oven), handfuls of seedless raisins, half a glass of sugar. Mix all this thoroughly to form a homogeneous mass - then our buns with cottage cheese from yeast dough will be neat.

Further actions

Let's bake

  1. Lubricate with the yolk left over from the eggs placed in the filling and place in an oven preheated to 200 degrees on a baking sheet previously covered with parchment. These beautiful buns are baked until cooked and golden brown (usually 20-25 minutes depending on the features of your oven).
  2. Take out the baking sheet and place on a plate, lightly sprinkle with powdered sugar. You can eat these beautiful buns right away, but even after standing for a day, they will not lose their attractiveness and taste. Children love these types of dishes: offer them a few buns and a glass of hot milk - they're simply delicious!

By the way, a small addition in terms of the design of the dish is for lovers of heightened aesthetics. When you have placed the filling on the prepared tortilla, you need to make three cuts in the circle of dough, as if dividing the tortilla into three equal segments around the filling. Then we begin to twist them clockwise around the filling, forming an open-top bun. In the future, the cooking recipe remains the same as indicated above. It’s just that each bun turns out to be original, twisted around the axis of the filling of the form.

Rose buns. Recipe

We prepare this dish based on yeast dough (the recipe can be used the same as the previous time). We leave the filling the same - nothing needs to be changed. But the cooking method is slightly different.

Another nice variety

Well, shall we indulge in buns? What Carlson used to say, remember? But in fact, bun buns are quite simple to prepare, using the skills acquired as a result of reading the article. For some, this is even a completely ordinary dish.

We will need to take half a liter of milk, a packet of quick yeast, a glass of sugar, four eggs, a pack of spread, 300 grams of cottage cheese, flour - about 8 glasses (focus on how much the dough will take), a good handful of seedless raisins.

Preparation

  1. First, as usual, you need to prepare the right dough. Take the milk and heat it up. We dilute the yeast in a small amount and let it sit for a while. Melt the margarine. In a saucepan, mix milk, yeast, flour, beaten eggs with sugar, melted margarine. Knead everything thoroughly so that the dough does not stick to your hands. Cover the dough and set aside in a warm place to rise.
  2. We form small balls from the dough (about 20 pieces will come out of this amount of ingredients). Using a rolling pin, roll each bun into circles, not too thin. In each mug we make a depression in the middle (this can be done with an ordinary glass). Place a good spoonful of filling into this cavity.
  3. Prepare the filling as follows. Mix a little sugar, raisins and cottage cheese. Add one egg.
  4. Place the stuffed buns on a baking sheet to rise a little more. Afterwards, we bake in the traditional way in the oven until the delicious ones with cottage cheese are browned. After which you can take it out of the oven and eat it with tea or coffee - simply delicious!

The last five days were marked for me by two pleasant events 😀 - a friend arrived who lives in the region, and with whom we have been very close friends for the 9th year, but real meetings are very rare due to the distance...

And today I will tell you about what I treated them to 😉 Of course, in such cases it’s hard to do without yeast baking! Therefore, today I present to your attention the dough.

It is interesting, in my opinion, because in the presence of yeast it is similar to shortbread... And all thanks to the significant amount of cottage cheese and vegetable oil in its composition! 😉

Ingredients required for kneading the dough:

  • cottage cheese - 300 g
  • milk - 200 ml
  • water - 200 ml
  • sunflower oil - 200 ml
  • eggs - 2 pieces (+ one more for lubricating products)
  • premium wheat flour - 10 cups
  • dry yeast - 13 g
  • salt - 2 tsp.

Kneading the dough:

Sifted the flour into a separate large container. Added salt and dry yeast to it. Mix the dry mass thoroughly.

I combined eggs, water, milk and cottage cheese. I took 9 percent, in packs, Syzran, medium humidity.

Whipped it.

Pour the milk mixture into the flour.

While kneading, I added sunflower oil, this time refined.

Knead the dough thoroughly.

08 Apr 2012, . This is probably my favorite yeast dough. Baking from it turns out very soft, airy, does not go stale for a long time and remains as tender and tasty as on the first day of baking.

Since I became acquainted with this dough, I very often use it for pies and pies, buns and even Easter cakes.

For the test you will need:

1 glass of milk

1 pack of cottage cheese (200 g)

1 packet of dry yeast (7 g)

1/2 tsp. salt

3 tablespoons sugar

100 g butter

500 g flour (you may need more, it all depends on the cottage cheese and the quality of the flour itself)

You can use vegetable oil for kneading (so that the dough does not stick to your hands too much)

.

Mix the yeast with a teaspoon of sugar, pour in a little warm water (about 50 g) and place in a warm place so that the yeast starts working.

In a bowl, mix soft butter, warm milk, salt, sugar and cottage cheese. It is best to mix with a mixer until creamy. Pour the risen yeast, 2 yolks into this mixture and sift half the flour. Mix everything again with a mixer. After that, sift the remaining flour and knead the soft dough with your hands.

Yeast dough loves to be kneaded for a long time, so the longer you knead and beat it, the tastier your baked goods will be. You may need a little more flour, especially if the cottage cheese is wet. For this test, I take cottage cheese in a pack; then there is no need to rub it through a sieve. However, do not overdo it with flour, the dough should be, as my mother says, “young.” (watch the video)

Cover the dough with a towel and place in a warm place to rise.

Knead the risen dough and let it rise again. When the dough has almost tripled in size, knead it again and...

Happy creativity!
