The big “but” of this “countryside” cocktail is that the most “correct” cachaca for it is farm-made, not factory-made. This gives rise to the first difference in caipirinhas in different countries: in Brazil the cocktail is made with white cane sugar, but in places where homemade sugar-cane moonshine is not available, brown is used to borrow the desired note from it. In general, sugar must be cane sugar, and white or brown - depending on what kind of cachaça you have.

It's just that brown sugar from sugar beets is not suitable: the point of a caipirinha is precisely the intense sugar cane flavor. Let the Brazilian peasants earn an extra centavo, in short! Another variable component is ice. In Brazil, normal ice cubes are used, like those sold in stores or frozen in containers. In Germany, crushed ice is used (not to be confused with crushed ice). I’ll explain why in step 5. Well, let’s say about lime – ideally, under a caipirinha you need an unsprayed one, but where can you get it?..
