Cheese cookie dough is essentially shortbread dough with cheese mixed into it. It’s made in the most classic way: butter is ground with sugar and flour (as well as vanilla and salt), then grated cheese is poured into the resulting fatty crumbs (you can also use a fine grater, but there’s no point, the cheese will melt anyway, but grate on a fine grater more difficult). Then an egg is added, and the result is a plastic, thick dough.

Two controversial issues in the test are flour and sugar. Sugar: in the form of sand or powder? There is almost no liquid in the dough, so the sand does not dissolve and then crunches on the teeth. So, if you’re not too lazy, it’s better to grind the sugar, it’s sweeter and more beautiful (grains of sugar are visible in the dough with the naked eye). But if you are very lazy, this is not such a crime as greasy meringue whisks; you can survive granulated sugar in cheese cookies. Flour: 200 or 300 g? 200 g will give a very tender and crumbly, but incredibly satisfying cookie. At 300, the cookies will be tougher and drier in taste. You can do it both ways, each has its own charm. The first, naturally, is higher in calories.

Well, did the dough turn out well? Now we need to roll it out. It’s not worth rolling the whole thing; the layer will be very large. Take a third, or even a quarter. Roll out half a centimeter thick, or even a little less. Now you need to grease the cookies with an egg (beat the egg with water to better lubricate it) and if you are thinking of sprinkling it with something, now is the best moment. You can, of course, sprinkle it later, when the cookies are already cut and lying on the baking sheet, but then half of the sprinkles will disappear - it will spill past the cookies. And when you sprinkle the entire layer, everything remains on the dough. By the way, if you don’t want to, you don’t have to grease it with egg and don’t sprinkle it with anything at all; these actions serve an aesthetic rather than a practical function. Of course, cookies not brushed with egg do not shine so beautifully after baking, but they taste no worse.

The rolled out and sprinkled portion remains to be cut and baked. You can cut it with a knife, scissors, or a glass, but it’s most convenient to use a pizza cutter or a shortcrust pastry wheel like this, which has a grooved edge. And it cuts perfectly, even cookies with a patterned edge. Now onto a baking sheet (you don’t need to grease it too much, the cookies are not very sticky; but I still put a non-stick sheet on it, just in case), and into a heated oven. The temperature is average, 180-200. The cookies do not bake for very long, about 10-15 minutes, the main criterion is the color (golden) and smell (throughout the entire apartment).

When you take out the baking sheet, the main thing is that everything is not taken away from it in the first 7 seconds. There were precedents. If you still managed to save the cookies from being devoured while hot, let them cool for about 15 minutes, and during this time you yourself brew some good fragrant tea. You can even have it with lemon. And you can start drinking tea and eating cookies.

Wrap the resulting sausage in cling film and put it in the refrigerator for 1 hour, so that later it will be easier to cut and it will not crumble.


After the time has passed, remove the dough from the refrigerator, cut into slices approximately 1 cm wide. Place the sliced ​​cookies on a baking sheet lined with baking paper. Bake in the oven at 180 degrees for 20-25 minutes.
