  • Kefir – 300 ml
  • Egg – 1 pc.
  • Butter – 1 tbsp.
  • Vegetable oil – 1.5 tbsp.
  • Flour – 550 gr.

  • Powdered milk – 1 tbsp.
  • Instant yeast e – 1.5 tsp.

How to bake bread with kefir in a bread machine

Sift flour and milk powder through a sieve.

Add all the specified ingredients to the bowl of the bread maker (first the liquid, then everything loose), I bake bread with kefir in the LG HB-1001CJ bread maker, perhaps the order will be different in your bread maker.

Place the bowl in the bread maker and select the BASIC mode for baking.

Sift flour, yeast and milk powder into a bowl.

In another form (I immediately take the one that will be used for, for example, glass, heat-resistant) mix kefir, eggs, sunflower oil, butter, salt and sugar. Stir.

We begin to gradually add the flour mixture, helping with a wooden spatula, and then knead our dough with our hands.

When the kefir dough is prepared, let it rise for about 2 hours in a warm place (you can put it near a radiator). When the dough has increased, place the pan in the oven, preheated to 200 degrees for 35-40 minutes.

Then we take the pan out of the oven, remove the kefir bread from it so that the bun does not get damp, cover it with towels, cooling it gradually.

Wheat bread made with kefir turns out very tasty, soft, and porous. There is a light note of fermented milk products. And the bread according to this recipe does not crumble at all:

Ingredients:

  • 1.5 tsp. yeast (necessarily fast-acting, I like Saf-moment or “Voronezhskie”),
  • 50 g semolina,
  • 450 g wheat flour,
  • 2 tbsp. l. granulated sugar,
  • 1.5 tsp. salt,
  • 2 tbsp. l. any vegetable oil,
  • 250 ml kefir or yogurt,
  • 70 ml water.
  • Cooking process:

    The recipe is universal in that the amount of water and kefir can be changed, the main thing is that the total volume of liquid is 320 ml. You can use 200-250 ml of kefir, adding water to the total volume depending on the situation.

    Load the ingredients into the bucket according to your instructions for the bread machine; I load them in the order indicated in the recipe. Bake kefir bread in a bread maker on the main bread baking mode or on the “French” mode. In a Panasonic bread machine, I bake yeast bread from kefir dough on the first “basic”, where the cooking time, including heating of the products, is 4 hours. The crust color is “light”, the loaf size is L.

    We suggest baking bread with kefir in a bread machine; homemade baked goods in it are always fresh and very tasty. This kefir bread tastes completely different, not like regular white or French wheat bread. In my bread machine, I tried several recipes for bread with kefir; I especially liked this one with semolina. It is good in its own way, so for those who have not tried this bread, I advise you to definitely bake it. If you haven’t yet acquired a bread maker, bake bread with kefir in the oven or slow cooker.

    To adapt this recipe to other models of bread machines, I point out that the proportions in the recipe are presented for a medium-sized loaf of bread weighing approximately 900 g.

    How to make bread with semolina

    Ingredients:

  • Dry fast-acting yeast - 1.5 teaspoons (I use Voronezh or Saf-moment),
  • Wheat flour – 450 g,
  • Semolina – 50 g,
  • Salt – 1 teaspoon,
  • Sugar – 2 teaspoons,
  • Vegetable oil - 2 tablespoons,
  • Liquid – total amount 320 ml, of which:

  • Kefir – 200-250 ml,
  • Water – 70-120 ml
  • Cooking process:

    The ratio of kefir and water may vary, the main thing is to maintain the total amount of liquid.

    The step-by-step photo recipe shows kefir bread from a bread machine, which uses 250 ml of kefir and 70 ml of water.

    Measure the required amount of flour on the scales and sift it.

    Load all the ingredients into the bread machine bucket according to the instructions for your model (bulk products are first loaded into the Panasonic: yeast, flour, semolina, salt, sugar, and then liquid).

    Insert the bowl into the bread maker and select the appropriate mode for baking this yeast bread with kefir.
    In my Panasonic, this is the main mode, loaf size L, crust color “medium”. The program cooks bread for 4 hours, preheating the ingredients to the desired temperature.

    When I bake bread for the first time using a new recipe, I always check how the bread loaf looks when kneading the dough.
    Initially, there was not enough liquid in this recipe, I had to adjust it so that the dough ball made from kefir yeast dough would be as it should be. I advise you to do the same when changing flour in baking; sometimes, due to the low gluten content, the dough “floats”, that is, it turns out liquid. This causes the top of the finished bread to collapse.

    The bread maker beeped, the kefir bread is ready!

    It must be removed from the bucket and cooled completely on a wire rack or wooden board, wrapped in a towel.

    Very fresh, still warm, it has the smell of fermented milk products; when it cools down well, this smell becomes faint, but pleasant.

    The structure of kefir bread is airy, porous and does not crumble at all. It is better to cut fresh baked goods with a large, sharp knife.

    • kefir – 1 glass;
    • soda and salt - 1 teaspoon each;
    • refined vegetable oil – 3 tbsp. spoons.

    Preparation

    1. Dissolve salt and soda in kefir, gradually add flour and knead, lubricating your hands with vegetable oil.
    2. After obtaining a homogeneous texture of the flour ball, it is transferred to an oiled pan and baked in an oven preheated to 200 degrees.
    3. In 30-40 minutes, quick kefir bread will be ready.

    Kefir bread without yeast in a bread machine


    Yeast-free kefir bread can be prepared without difficulty or hassle using a bread machine. The product will be as useful as possible if you replace part of the premium wheat flour with whole grain flour, add oatmeal, crushed flax seeds and dried fruits. It is better not to use soda, replacing it with baking powder.

    Ingredients:

    • wheat and whole grain flour - 1 cup each;
    • rolled oats - ¾ cup;
    • dried fruits and nuts – 1 cup;
    • kefir – 1.5 cups;
    • refined vegetable oil – 4 tbsp. spoons;
    • flax and sesame seeds, bran - 3 tbsp. spoons;
    • liquid honey – 1 tbsp. spoon;
    • salt – 1 teaspoon;
    • baking powder - 2.5 teaspoons.

    Preparation

    1. Grind flax seeds in a blender or coffee grinder and fry them in a dry frying pan with bran and sesame seeds.
    2. Mix kefir, honey and butter and pour into the bread machine container.
    3. Add dry ingredients mixed separately in a bowl, supplementing them with dried fruits and nuts prepared in advance.
    4. Turn on the “Cupcake” or “Baking” mode.
    5. After the device signals, the kefir bread in the bread machine will be ready.

    Rye bread with kefir without yeast


    Kefir is healthier than white kefir, has a lower calorie content and high nutritional value. These baked goods are prepared in three minutes from simple and affordable ingredients. The main thing is not to overdo it with adding flour and stop in time, leaving the texture of the dough soft and slightly sticky, lubricating your hands with butter when kneading.

    Ingredients:

    • rye flour – 200 g;
    • wheat flour – 100 g;
    • kefir – 300 ml;
    • salt and granulated sugar - 1 teaspoon each;
    • soda – ½ teaspoon.

    Preparation

    1. Mix salt and sugar with two types of flour, add a little quenched soda, pour in kefir and knead first with a spoon and then with your hands.

It turns out very tasty if you add raisins, fried sunflower seeds, pumpkin seeds, sesame seeds or chopped nuts to the dough. You can simply bake the product on a floured baking sheet or in a mold.

    Ingredients:

    • flour – 500 g;
    • low-fat kefir – 450 ml;
    • seeds, chopped nuts and raisins – 50 g each;
    • salt and soda - 1 teaspoon each.

    • salt – ½ teaspoon;

    Bread in a sourdough bread machine without yeast does not cause digestive discomfort. The reason is that wild yeast in sourdough neutralizes the phytic acid found in flour that causes fermentation. Healthy bread deserves careful handling, including growing the starter for 6 days and baking in a special mode.

    Ingredients:

    • water - 300 ml;
    • flour - 400 g;
    • bran - 100 g;
    • salt and sugar - 25 g each;
    • oil - 25 ml;
    • sourdough - 3 tbsp. spoons.

    For sourdough:

    • flour - 50 g;
    • water - 30 ml;

    1. For sourdough, mix flour with water.
    2. Leave warm under a towel for 3 days.

    4. After 2 days, remove the crust, add 140 g of flour and leave for 18 hours.
    5. Stir, remove half of the starter, and feed the remaining with 125 ml of water and 140 g of flour.
    6. After 12 hours, place 3 tbsp. spoons of sourdough along with water and oil into a bucket.
    7. Add dry ingredients.
    8. Set: kneading 1 - 14 minutes; rise 1 - 60 minutes; kneading 1 - 5 minutes; rise 2 - 2 hours; rise 3 - 2 hours; baking - 1 hour 20 minutes.

    Whey bread in a bread maker without yeast is another option for simple and high-quality baking, based on the work of whey proteins, which quickly activate fermentation, give the product a soft texture and additional protein. To speed up the processes, it is better to heat the whey and add soda only 10 minutes after mixing.

    Ingredients:

    • serum - 500 ml;
    • sugar - 30 g;
    • salt - 5 g;
    • soda - 10 g;
    • flour - 700 g;
    • oil - 60 ml.

    Preparation

    1. Dissolve salt and sugar in warm whey and pour into a bucket along with the butter.
    2. Add flour.
    3. Turn on the “Quick Baking” mode.
    4. After 10 minutes of kneading, add soda.
    5. After 5 minutes, stop kneading.
    6. Cook yeast-free bread in a bread maker in “Baking” for an hour.

    1. Melt the butter, sugar, extract and molasses in a bathhouse.
    2. Mix flour with a pinch of salt and baking powder.
    3. Pour warm water and malt syrup into a bucket.
    4. Add dry ingredients.
    5. Turn on the “Dough” mode for 15 minutes.
    6. Cook in “Baking” for 60 minutes.

    Yeast-free bread in a bread machine with milk


    In fact, bread without yeast in a bread machine can be kneaded using any liquid ingredients. The same milk will make the dough softer and give the bread a delicate milky flavor. But it is not milk that raises the dough. All the hard work falls on the baking powder. To make his work easier, you need to beat the egg whites - they will help retain air in the dough.

    Ingredients:

    • flour - 300 g;
    • baking powder - 10 g;
    • egg - 3 pcs.;
    • salt - 5 g;
    • milk - 350 ml;
    • oil - 100 ml;
    • spices to taste.

    Ingredients:

    1. Combine dry ingredients.
