If you skip this step, the beans will take a very long time to cook, and after eating them you may experience gas and other stomach problems. The fact is that during soaking, chemical reactions occur in the beans, during which harmful compounds (antinutrients) are destroyed.

Are the beans steeped? Great, drain the old water, pour in fresh water, put it on the stove and bring to a boil. Cooking time is 40-60 minutes, although it can be longer. Just take 1-3 beans to try from time to time. If they are soft, then the beans are ready and can be removed.

Add salt only at the very end, 10 minutes before the end of cooking. If you add it at the beginning, then, as practice shows, the cooking time increases greatly. Some people add soda, thinking that it will help it cook faster, but I personally haven’t noticed anything like that. Maybe I didn't add enough.

Let's start cooking

  1. First, peel and wash the onions and carrots. Grate the carrots on a coarse grater and fry in oil over medium heat. After 10 minutes, add the onion cut into rings, tomato paste, salt, mix and fry until fully cooked - until they become soft. The main thing is that nothing burns.
  2. In the meantime, use a masher to mash the boiled beans to a puree. You can use a blender for this. Add pepper and a couple of tablespoons of vegetable oil.
  3. Now put the fried vegetables in the beans (along with the oil) and mix well. The filling is ready.

2. Wash the cilantro, dry and finely chop. Peel the onions and chop finely. Heat the remaining vegetable oil in a frying pan, add the onion and fry, stirring, for 4 minutes. Add the fried onions and chopped herbs to the bowl with the beans. Salt, pepper and mix the filling.

3. Prepare the dough. To do this, mash the eggs with butter, add sugar, salt, and baking powder. Pour in the milk. Add sifted flour little by little and knead into a homogeneous elastic dough.

2. Drain the water, add cold water again two fingers above the beans, bring to a boil, reduce the heat to low and cook without salt until soft. The beans should be slightly boiled. During the cooking process, which will last about an hour depending on the type of beans, add cold water as they boil.

3. Drain the broth, if any, add oil and puree the beans. Then add sugar, honey and stir until smooth. Let the filling cool at room temperature.

4. For the dough, dissolve the yeast in slightly warm milk with the addition of 2 tbsp. spoons of sugar and let the mixture stand for 15 minutes so that the yeast is completely dissolved.

5. Melt the butter in a water bath, adding a teaspoon of salt. If it gets hot, cool until warm.

6. Beat eggs at room temperature with the rest of the sugar until white foam.

7. Combine the yeast, oil and egg mixtures and mix well.

8. Add sifted flour in small portions and knead the dough. It is better to have too little flour than too much flour. The dough should be soft, elastic and not stick to your hands.

9. Place the lump of dough in a saucepan or deep bowl, cover with a towel and leave in a warm place to rise. The dough should double in size.

10. Punch down the risen dough and knead a little more, adding vegetable oil (it is necessary so that the pies do not go stale for a long time).

11. Place the dough back in a warm place and let it rise again.

12. Punch down the dough again, knead a little, form into rolls, and cut into equal pieces.

13. Roll out the pieces of dough into flat cakes, put sweet bean filling on them and make pies.
