  • Red currant - 550 g;

Preparation

The first step is to prepare the currants. Place it in a colander and rinse thoroughly under cool water. Then, leave for a while to drain excess water. Now carefully pick the berries from the green stalk.

Place the currants in an enamel pan or other container with a thick bottom. Pour in the required amount of water. Place the pan over high heat. As soon as the mixture boils, reduce the heat and simmer for 10-15 minutes until the berries soften. Remove from heat and let contents cool slightly.

Pour the berry mixture into a fine sieve and strain, removing seeds and skins. You can first grind it with an immersion blender, then pass it through a strainer.

Return the pureed berries back to the cooking pot. Add the amount of sugar required by the recipe. Place on medium heat. Bring to a boil, stirring with a wooden spoon to dissolve the sugar grains. Cook for 5 minutes over moderate heat. Prepare the jars. From this amount of currants you get 500 ml of finished jam. Wash jars with lids thoroughly with baking soda and rinse under running cold water. Boil the lid for 7-10 minutes in a separate saucepan. Sterilize the jar over steam, in the microwave or oven.
