Dry waffles

Mix all the products with the required amount of flour and prepare the dough, like for pancakes.

Ingredients (for 2 servings):

  • Curdled milk - 0 .5 l
  • Butter - 0 .5 glasses
  • Sugar to taste
  • Flour to taste

Apple waffles

Beat the butter (or margarine) by adding sugar. Then add separately beaten egg yolks. The whole mass is whipped until foaming. Flour, mixed with baking powder and a small amount of milk, is poured into the prepared mass and everything is mixed. Then pour in the remaining milk. By the end of kneading, the dough should flow out of the spoon into a viscous, viscous mass. The apples are peeled, cut into cubes and mixed into the dough. Add ground nuts and cinnamon. Then carefully fold in the separately whipped whites.

Before baking waffles, you need to prepare the waffle iron: heat it for 10 minutes and grease it with oil. Bake waffles for 2-3 minutes.

To prevent the waffles from being soft, you should pour the batter in a thin layer, dry the waffles well (but make sure they don’t burn) and cool without stacking them on top of each other.

    • How to prepare curd dessert with biscuit waffles: 250 ml chilled cream fat content 33-35 % beat with powdered sugar ( 100 d) to soft peaks - the mass should increase in volume. As soon as a clear mark from the whisks is visible, the mass is whipped. The main thing is not to over-whip, otherwise the cream will separate.
    • Add to cream 250 g cottage cheese. I first ground it through a sieve for a more delicate structure. Lightly beat with a mixer to combine the cottage cheese and cream. You can do this with a spoon or spatula so as not to overbeat.
    • Melt 100 g white chocolate in the microwave in short bursts 10-15 seconds, stirring each time. Pour the cooled chocolate into the prepared mass and mix with a spatula. Cover with cling film and place in the freezer until completely frozen.
    • Preparing biscuit waffles. 2 beat eggs with 40 g sugar and 5 g vanilla sugar into a strong foam.
    • Add flour in several stages ( 40 d), stirring gently with a spatula.
    • Fill silicone waffle molds. I lubricated them with vegetable oil for insurance. Bake in preheated 180 °C oven until done. We check readiness with a wooden skewer or focus on the external “tanned” appearance.
    • The waffles turn out very soft and tasty, and together with the curd dessert they are a pleasure.
    • Decorate the curd dessert with waffles with melted chocolate, raspberries and mint leaves. Serve to the table and enjoy! Bon appetit!

    Rhine waffles with cinnamon

    Fragile, crumbly Rhenish waffles with cinnamon, cloves and lemon zest are baked in a waffle iron.

    How to make Rhenish waffles with cinnamon:

    All starting products - butter, margarine, eggs, milk must have the same temperature. Then they mix better.

    When preparing the dough, first beat the butter or margarine and add granulated sugar little by little.

    Beat the eggs separately until foam forms.

    The sifted flour is poured into the whipped margarine in portions, stirring constantly.

    Pour a beaten egg into the well-mixed dough, add zest and spices and mix well again until the lumps disappear. The dough should have a uniform consistency.

  • White bars (candies) - 300 G
  • Poppy - 100 G
  • Chopped walnuts - 100 G
  • Butter - 150 G
  • Jam (I chose apple-strawberry) - 300 G

Preparation - 2 hours (your 30 min):

  • How to make waffles with filling: Let's prepare the filling for the waffles. First, remove the wrappers from the bars.
  • Grind the candies one by one in a meat grinder. Add softened butter to them, 75 d. Then add poppy seeds to the white mass, and nuts to the chocolate ones. Mix well. Chocolate bars are firmer than white ones, and you may need to add a little butter to make the mixture softer.
  • Spread the chocolate filling onto the wafer cake in a thick layer and distribute it evenly.
  • Cover with another cake layer and grease it with jam.
  • Next - the next cake and white bars, cake and jam. Cover with the last layer of cake, and then with a cutting board, on which we place a small weight. Let's let it stand like this 1-2 hours. Then cut the waffles into diamond pieces.

Wafer rolls with boiled condensed milk in chocolate glaze are my favorite delicacy)))

Mix eggs with sugar, add flour, then pour in melted margarine, mix, bake.

As soon as you remove the wafer sheet from the waffle iron, immediately add boiled condensed milk and wrap it in a roll, otherwise the sheet will harden and the wafer tube will break.

Chocolate glaze.

Heat 2 tablespoons of water in a bowl, sift 150 ml of powdered sugar into it, and 150 ml of cocoa powder into it. When it boils, pour in 20 g of melted butter.

When the tubes are baked, dip both sides into the glaze, place the waffle tubes on a plate and sprinkle with powdered sugar.

Margarine - 100 g.
Sugar - 1/2 cup
Egg - 3 pcs.
Lemon - 1 pc.
Beat the eggs with sugar, pour the slightly cooled melted margarine into the beaten eggs, stirring vigorously. Add potato flour, grated lemon peel and stir.


3. TENDER WAFFLES
Margarine - 125 g.
Sugar - 30 g.
Flour - 100 g.
Egg - 4 pcs.

Melt the margarine.
Add egg, sugar, vanillin, mix with a mixer. Next, there is a trick: to make the dough without lumps, I first add flour and stir, and then add milk a little at a time.
If the dough becomes liquid, add more flour and dilute it with milk. And so on until approximately 0.5 liters of milk are used up.
The dough should turn out like thick sour cream (but not rustic sour cream, where a spoon rests).


8. WAFFLES WITH CONDENSED MILK
margarine 200 g;
condensed milk 1 can;
eggs 2 pcs;
starch 1 cup;
flour 1 cup;
soda (1/3 tsp), slaked with vinegar.
Knead the margarine, mix all the ingredients, the dough should not be liquid. Place a little dough on the base of the waffle iron, making sure that the waffles do not burn.
Before the first waffle, you need to grease the waffle iron (both surfaces), then no oil is needed. To ensure that the waffles are the same color, I follow the clock with the second hand. As soon as the waffle is ready, I roll it into a tube. I tried different recipes, but I didn’t like everything; if you don’t eat it at once, the waffles become soft, but these ones remain crispy for a long time.


9. WAFFLES WITH SOUR CREAM
Eggs - 5 pcs.
Sugar - 5 tbsp. l
Butter - 1 tbsp. l
Sour cream - 1/2 cup
Flour - 1 cup
Separate the whites from the yolks and place in the refrigerator. Grind the yolks with sugar until white, add melted butter (not hot), sour cream; mix, add flour and stir well until smooth. Add the chilled egg whites, whipped into a thick foam, into this mixture and carefully mix from top to bottom.


10. CREAM WAFERS
butter - 125 g
sugar - 3-4 tbsp. spoons
flour - 1/2 cup
eggs - 4 pcs
cream - 4 tbsp. spoons
water - 1 glass
vanilla sugar - to taste

Mix softened butter with sugar and vanilla sugar.
Divide the eggs into whites and yolks.
Beat the egg yolks with salt into a homogeneous mass and transfer to softened butter and sugar.

2 tsp. baking powder
1 tsp. soda

100 g butter, melted

Egg - 2 pcs
Milk – 140 ml
Sugar (large) - 180 g
Butter - 200 g
Yeast (dry) - 1.5 tsp.
Vanilla sugar - 1 packet.
Salt - 0.2 tsp.
Heat half the milk /in the microwave or on the stove/. Add the yeast, cover and leave to rise for 10 minutes.
Break 2 eggs into the remaining milk, add salt, beat everything well with a whisk.
In a deep bowl, mash the flour together with the butter. Add sugar, milk with yeast and milk with eggs, mix well with a wooden spoon or mixer at low speed until a sticky dough forms. Cover and leave to rise for 30 minutes.
On a well-floured work surface, divide the dough into 12 pieces.
Roll each part into a ball and roll in large pieces of sugar.


18. VIENNAIAN WAFFLES.

Corn flour - 150 g
Chicken egg - 2 pcs
Butter - 50 g
Milk – 200 ml
Liquid honey - 4 tbsp. l.
Chopped almonds (a little)
Baking powder - 1 tsp.
Rum (possibly without it) - 1 tsp.
From corn flour, eggs, butter (melt), milk, baking powder, honey and rum (if adding), knead the dough and let it sit for 10-15 minutes.
Add almonds and mix.

Butter - 125 g
Sugar - 0.5 cup.
Flour - 1.5 cups.
Egg - 2 pcs
Cloves (ground) - 2 g
Cinnamon (ground) - 2 g
Lemon zest (grated, 1 lemon)
First, beat the butter (room temperature), add sugar, yolks, ground cloves, cinnamon and lemon zest little by little. Pour the sifted flour into the whipped butter in portions and stir constantly. Pour separately beaten egg whites into the well-mixed dough and mix well again. Bake until done.

Granulated sugar - 0.5 cup.
Sunflower oil - 1 tbsp. l.
Wheat flour - 1 cup.

Mix everything and bake the waffles until golden brown.


30. WAFFLES WITH CINNAMON.
200g sl. beat butter with salt,
1/4 tbsp. sugar, cinnamon, add 1 tbsp. flour, mix.

Remember the delicious wafer rolls with condensed milk or cream? These are still sold in stores and worn on beaches. But store-bought straws are not the same, the waffles in them are not crunchy, and the filling is cloying and so heavy that one straw weighs 200 grams. So let's get out our waffle irons and bake homemade waffles - crispy, tasty, thin!

Ingredients:

  • 5 eggs;
  • 200 g butter;
  • 1 glass of sugar (a little less is possible);
  • 1 and 1/3 cups of flour (I have a glass with a volume of 200 g, it holds 130 g of flour without a slide. So, 1 and 1/3 cups is approximately 180 g of flour).
  • 1/6 teaspoon salt;
  • 1 tablespoon of odorless sunflower oil - so that the waffles do not stick to the waffle iron.

Note: to reduce fat content, you can replace half the butter with sour cream, take 100 g of butter and 100 g of sour cream.

How to bake:

Olya, a regular reader and author of delicious children's recipes on the site, told me the recipe for the dough for crispy waffles. This recipe came complete with an electric waffle iron, “native”, so to speak, and therefore the most successful.

I improved it a little more, taking into account the information found on the Internet. In the original, you need to melt the butter, but it’s even better to just soften it: then the waffles won’t stick to the waffle iron.

So, beat the softened butter with sugar using a mixer.


Add eggs and beat some more.


Sift flour into the dough, add a little salt and mix.


The consistency of the dough should be like pancakes.


To prevent the waffles from sticking to the waffle iron, add 1 tablespoon of sunflower oil. I did this after the 2nd waffle: the first two things had to be separated from the surface of the waffle iron with a knife, but after adding oil, the waffles came off perfectly, and there was no need to grease the waffle iron each time. Once before the first waffle was enough.

The dough is ready! Now you can start an exciting activity – making homemade waffles!

My parents gave me the waffle iron. Once upon a time, delicious waffles were baked in it, and then they were not used for a long time. We found her while cleaning out the garage. I was very happy, because I had long wanted to learn how to bake homemade waffles, but at the same time I was slightly worried whether the waffle iron would work after 10 or 15 years of oblivion? I wiped it thoroughly, dried it, properly lubricated the surfaces with sunflower oil and plugged it into the outlet. A couple of minutes of waiting... and - hurray! – the waffle iron started to heat up! Works! So there will be waffles. 🙂

Just do not touch the surface of the waffle iron with your finger to check if it is hot. Not only can you get burned, there is a risk of getting an electric shock. To check whether the waffle iron is warm enough, you can drop a drop of batter on it: if it starts to cook, then you can start baking waffles. It takes 4-5 minutes to warm up, but then the unit will heat up and the process will begin.


Pour the dough onto the bottom surface - 1-2 tablespoons, a little less than in the photo above. The exact amount is determined by experiment. If you pour a lot, the dough will run slightly over the edges, and you can carefully remove it with a knife. If you pour too little, the waffle will not fill the entire area of ​​the waffle iron. It's not scary, it'll just be a small tube.


So, pour the dough, close the waffle iron and press it by the handles. Carefully! – at this moment hot steam flies out of the waffle iron, so put an oven mitt on your hand.

We hold it a little, and then you can let it go and let it bake. One waffle is baked from 20-30 seconds to 1.5-3 minutes, depending on the power and settings of your waffle iron. To find out if it’s ready, open the waffle iron slightly and look in... It’s still pale, which means you need to hold it for a couple more minutes.

But now it's time to take it out! We act quickly, as the finished waffles quickly harden and become brittle.


Use a knife or spatula to pry up the waffle, transfer it from the waffle iron to a board or plate and quickly, while still soft, roll it into a tube.



Be careful, the waffle is hot. After twisting the wafer roll, hold it for a few seconds to prevent it from unwinding. Hooray, it worked! The first tube is not lumpy. Place it on a plate and start baking the second waffle.


This is not a quick task - a portion of the dough makes 15 waffles, and since each one is baked for 4 minutes, the overall preparation will take 1 hour. But how great it is to sit in the kitchen, in the warmth, chat with your family about this and that, and then taste crispy homemade waffles together!


So a whole pile of straws is ready! We couldn't resist and tried two without filling at once. By the way, it’s very tasty, you can eat waffles just like that, without cream!


Or you can fill them with condensed milk, or custard, or chocolate, or protein... There are many options! And you and I will slowly try them out - because we already know how to cook thin, crispy waffles in an electric waffle iron!

Wafer rolls are one of the most favorite types of cakes of every child born in the USSR. In those days, only truly lucky housewives had such a culinary device - an electric waffle iron - so not everyone could easily please their family and friends with such a delicacy when they wanted.

My husband told me that more than once his mother had to borrow an electric waffle iron from a neighbor in order to prepare such waffle rolls with condensed milk and custard for a sweet table for her birthday. Today, such a problem is unlikely to arise for anyone, since every family can afford to buy such equipment, even with a not very large monthly budget.

The dough contains “standard” baking ingredients: flour, eggs, sugar and butter, which is sometimes replaced with margarine. Also, more experienced housewives add milk, cream, vanillin, vanilla sugar to the dough, not to mention various flavoring additives. I myself am a fan of traditional waffle rolls, so I don’t use additional products.

After the dough is ready, the most interesting part comes, namely the process of baking in an electric waffle iron. Place a tablespoon of dough onto a heated and greased surface and bake until golden brown. While the cake has not cooled down, it is rolled into a tube (in the form of a tube or a cone), and it is important to put on rubber gloves on your hands, or dip your fingers in cold water so as not to get burned.

Once your straws are ready and slightly cooled, it’s time to fill them with filling. This is where you can give free rein to your culinary imagination. Most often, boiled condensed milk is used as a filling for waffle rolls, but just as often they opt for jam, sour cream or custard, jam, etc. It all depends solely on the culinary preferences of both the cook and his household.

Traditional waffle rolls with condensed milk in a waffle iron

Here is a classic traditional recipe for wafer rolls in its pure form. For the filling, you can use either home-cooked condensed milk or buy it ready-made in the store. I recommend using the first option.

Ingredients:

Dough:

  • 2 tbsp. flour
  • 150 gr. margarine
  • 3 eggs
  • 1 tbsp. Sahara
Cream:
  • 1 iron can of condensed milk
  • 200 gr. butter

Cooking method:

  1. First of all, prepare the dough. Melt the margarine in a water bath.
  2. In a deep container, whisk the eggs.
  3. Add margarine, sugar and flour to the egg mixture. Beat the whole mass thoroughly with a mixer.
  4. Grease the waffle iron with vegetable oil and let it warm up.
  5. Place 1 tbsp on the surface. spoon of dough and close both halves of the waffle iron.
  6. Bake the tube blank for 3 to 5 minutes. The time depends on the model of the electric waffle iron. The finished waffle will have a delicious golden hue.
  7. While the waffle is still hot, roll it into a tube and let it cool.
  8. When all the tubes are ready, it's time to make the filling.
  9. Transfer the pre-boiled and not yet cooled condensed milk into a deep bowl.
  10. Put the oil in it and stir everything until smooth with a mixer.
  11. We generously fill each of the wafer rolls with condensed milk.
  12. You can sprinkle the tubes with a small amount of chopped nuts or coconut flakes on top of the filling.

Delicious waffle rolls with custard


If you like desserts with custard, then these wafer rolls will find a true admirer in you. Crispy shell and tasty filling, what could be better for a real sweet tooth.

Ingredients:

Dough:

  • 300 gr. flour
  • 200 gr. sugar
  • 5 eggs
  • 200 gr. butter
Cream:
  • 500 ml milk
  • 4 eggs
  • 200 gr. Sahara
  • 200 gr. butter
  • 2 tbsp. l. flour

Cooking method:

  1. Let's start by preparing the dough for the tubes. First, melt the butter. Beat eggs in a bowl along with sugar.
  2. Pour the slightly cooled butter into the egg mixture. Stir and add flour in small portions. In terms of fluidity, the dough will resemble low-fat sour cream.
  3. From the finished dough, by analogy with the previous recipe, bake waffles and roll them into tubes of the desired shape.
  4. Cover the baked tubes with a towel and let cool completely.
  5. Meanwhile, prepare the cream. Beat eggs with sugar with a mixer in a saucepan. Then add flour to them.
  6. Pour milk into the resulting mass and place the saucepan on the fire.
  7. Cook the custard over low heat, stirring constantly, until it boils. Remove from heat.
  8. Place the butter in the warm cream and beat it with a mixer.
  9. We transfer the cream into a culinary syringe and use it to fill each wafer tube with the filling.

The Soviet electric waffle maker was sold with exactly this waffle recipe, which was printed on a separate sheet of paper and included in the box. Perhaps the “native” recipe that came with the kit will appeal to you the most. In addition, this time I suggest filling the tubes with whipped egg white cream.

Ingredients:

Dough:

  • 5 eggs
  • 300 gr. flour
  • 1 tbsp. Sahara
  • Salt on the tip of a knife
  • 130 ml vegetable oil
Cream:
  • 3 egg whites
  • 70 ml water
  • 2 tbsp. sugar
  • 1 tsp. citric acid

Cooking method:

  1. Mix all the ingredients indicated for the dough together in the same sequence as in the previous two recipes.
  2. Bake the waffles until cooked and immediately roll them up, giving them the desired shape.
  3. Now let's start preparing the cream. Beat the egg whites with a mixer.
  4. Pour water into a separate saucepan, add sugar and citric acid and bring to a boil.
  5. Cook the syrup until it begins to thicken.
  6. Pour the syrup into the protein mass, continuously whisking it with a mixer.
  7. Fill the tubes with the cooled cream.

The main thing is to strictly follow the step-by-step instructions and you will succeed. Finally, I want to give a couple of tips so that your waffle rolls turn out delicious the first time:
  • The consistency of the dough for the tubes should be like that of low-fat sour cream. You can achieve the desired effect by adjusting the amount of flour;
  • It is enough to lubricate the electric waffle iron only once, before baking the first cake; there is no need to do this in the future;
  • Roll the waffle cake into a tube immediately before it cools down. It is better to do this with rubber gloves, or by dipping your fingertips in cold water;
  • Ready-made wafer rolls can be filled with any filling: cream, preserves, jam, condensed milk, etc. Also, don’t forget to decorate them with powdered sugar, nuts or coconut flakes.
